  1. The best part about these vanilla-chocolate muffins is ...that they are actually healthy! Sure they look devilishly devious, sinfully fattening but they are surprising easy on the waistline. No kidding! The muffins have a cup and a quarter of finely grated zucchini (chock full of fibre) and has applesauce instead of butter or oil. I got the recipe from an awesome book called Cook Yourself Thin. The whole book is so amazing, easy to follow with delicious and nutritious recipes. Their vanilla cupcake recipe is easy breezy! And the from Jessica Seinfeld's book Deceptively Delicious. Another amazing book. So there is avocado puree to make the frosting luscious and creamy. All the frosting recipes I had previously looked at called for 3-4 CUPS of sugar. Okay-what's up with that???!! Crazy! Then I dressed up the plate with some goodies from Michaels-butterflies and flowers. Wanted to post it here so everyone can enjoy! Yummy!!

What an amazing photo! They look delicious and I love the fact that they are healthy and not the empty-poison kind. I love making avocado-chocolate pudding - creamy, wonderful and absolutely healthy.
